Pasta with chestnuts, pancetta, and sage

Chestnuts are nutty and slightly sweet and pair beautifully with woodsy sage and salty pancetta. Add them all to a thick pasta for hearty and satisfying meal.

This recipe was born from my love for chestnuts, and my overzealous purchase of them before Thanksgiving. I include chestnuts in my dressing, and when I see them on the shelves, I go a little nuts and always buy more than I need. So after that holiday madness dies down, I find ways to use them in other recipes. And by that point I have heard ?chestnuts roasting on an open fire? on the radio at least once.

This dish doesn?t take long to prepare, but makes an elegant, unique meal break during this crazy season. Time to take breath and enjoy time together.

Chestnuts are nutty and slightly sweet and pair beautifully with woodsy sage and salty pancetta. I readily find packages of pre-diced pancetta at markets, but if you don?t, go to the deli counter and ask them to give you a couple of thick slices and dice those into bits. ?Thin sliced pancetta does not work as well. ?

I used a short, twisted pasta labeled ?torcetti," but any short, thick pasta will work, like fusilli or casarecce. Orecchiette would work as well.? The chunks of pancetta and chestnut get lost in long pastas.? And I will admit, this is enough pasta to serve 4 people with a salad and some nice bread, but for big eaters, it may only serve 2!

Pasta with Chestnuts, Pancetta and Sage

Serves 4 (or two if you are really hungry)

10 ounces dried pasta

4 ounces diced pancetta

1 tablespoon chopped fresh sage, plus several large leaves

4 ounces roasted chestnuts, chopped

2 cloves garlic, minced

1 cup white wine [editor's note: may substitute cooking wine]

1 cup heavy cream

Salt and pepper to taste

Parmesan cheese

Cook the pasta in a large pot of salted boiling water, according to package instructions. Drain the pasta in a colander.

While the pasta is cooking, saut? the pancetta in a saut? pan, large enough to hold the pasta, over medium heat until it is cooked through and crispy.? Use a slotted spoon to remove the pancetta to a plate lined with paper towels to drain.? Drop a few sage leaves into the hot drippings and fry until deep green then remove to the paper towels. (This helps flavor the sauce, and the fried leaves are a wonderful garnish).?

Drop the chopped chestnuts into the drippings and saut? until they are a deep tan color, smell nice and nutty and start to crisp up, about 5 minutes.? Remove with the slotted spoon to the paper towels. Turn the heat off under the pan and let the drippings cool for a minute.? Drop the garlic in the pan for just a minute (don?t let it burn or turn dark), then pour in the wine.? Turn the heat on high and bring the wine to a boil. Sprinkle in about 3/4 of the tablespoon of the chopped sage.? Cook until the wine is reduced by half and is thickened and syrupy, about 5 minutes.?? Add the cream, lower the heat to medium and simmer until heated through and slightly thickened.

Add the drained pasta to the sauce in the pan and toss to coat, stir in the pancetta, chestnuts and remaining chopped fresh sage. Season to taste with salt and pepper. Serve immediately, with parmesan cheese grated over the top.

I'd like to join but I have a few questions first. What roles do the Gamma and Delta play? And what's the difference between a healer and a nurturer?

@ Zodia195 A Gamma technically doesn't exist in real wolf packs, but seeing as on here they are right below the Beta, they would be helping with the running of the pack and show dominance etc. The Delta is below the Alpha and the Beta in ranking, and in this case, below the Gamma too. They are usually the middle level of hierarchy and are trained to take over the position above them if the wolf/wolves there die.

A healer is sort of like a doctor/medic, they cure the sick and treat the injured. A nurturer takes care of cubs (I'm assuming) when others go out to hunt, a few wolves are left behind to care for and protect cubs/offspring of other wolves.

Nine hurt as gunmen fire at Cairo protesters

CAIRO (Reuters) - Nine people were hurt when gunmen fired at protesters camping in Cairo's Tahrir Square on Tuesday, according to witnesses and Egyptian media, as the opposition called for a major demonstration it hopes will force President Mohamed Mursi to postpone a referendum on a new constitution.

Supporters of the Islamist leader, who want the vote to go ahead as planned on Saturday, were also gathering in the capital, setting the stage for further street confrontations in a political crisis that has divided the Arab world's most populous nation.

Police cars surrounded Tahrir Square in central Cairo, the first time they had appeared in the area since November 23, shortly after a decree by Mursi awarding himself sweeping temporary powers that touched off widespread protests.

The upheaval following the fall of Hosni Mubarak last year is causing concern in the West, in particular the United States, which has given Cairo billions of dollars in military and other aid since Egypt made peace with Israel in 1979.

The Tahrir Square attackers, some masked, also threw petrol bombs which started a small fire, witnesses said.

"The masked men came suddenly and attacked the protesters in Tahrir. The attack was meant to deter us and prevent us from protesting today. We oppose these terror tactics and will stage the biggest protest possible today," said John Gerges, a Christian Egyptian who described himself as a socialist.

The latest bout of unrest has so far claimed seven lives in clashes between the Islamist Muslim Brotherhood and opponents who are also besieging Mursi's presidential palace.

POLICE POWERS

The elite Republican Guard which protects the palace has yet to use force to keep protesters away from the graffiti-daubed building, now ringed with tanks, barbed wire and concrete barricades.

The army has told all sides to resolve their differences through dialogue, saying it would not allow Egypt to enter a "dark tunnel". For the period of the referendum, the army has been granted police powers by Mursi, allowing it to arrest civilians.

The army has portrayed itself as the guarantor of the nation's security but so far it has shown no appetite for a return to the bruising front-line political role it played after the fall of Mubarak, which severely damaged its standing.

Leftists, liberals and other opposition groups have called for marches to the presidential palace later on Tuesday to protest against the hastily arranged constitutional referendum planned for Dec 15, which they say is polarising the country and could put it in a religious straightjacket.

Mohamed ElBaradei, a prominent opposition leader and Nobel prize winner, called for dialogue with Mursi and said the referendum should be postponed for a couple of months due to the chaotic situation.

"This revolution was not staged to replace one dictator with another," he said in an interview with CNN.

Outside the presidential palace, anti-Mursi protesters huddled together in front of their tents, warming themselves beside a bonfire in the winter air.

"The referendum must not take place. The constitution came after blood was spilt. This is not how a country should be run," said Ali Hassan, a man in his 20s.

Opposition leaders want the referendum to be delayed and hope they can get sufficiently large numbers of protesters on the streets to change Mursi's mind.

Islamists, who dominated the body that drew up the constitution, have urged their followers to turn out "in millions" in a show of support for the president and for a referendum they feel sure of winning.

OPPONENTS ANGERED

Leftist politician Hamdeen Sabahy, one of the most prominent members of the National Salvation Front opposition coalition, said Mursi was driving a wedge between Egyptians and destroying prospects for consensus.

As well as pushing the early referendum, Mursi has angered opponents by taking extra powers he said were necessary to secure the transition to stability after the uprising that overthrew Mubarak 22 months ago.

"The road Mohamed Mursi is taking now does not create the possibility for national consensus," said Sabahy. He forecast polarisation if constitution were passed.

The National Salvation Front also includes ElBaradei and former Arab League chief Amr Moussa.

The opposition says the draft constitution fails to embrace the diversity of 83 million Egyptians, a tenth of whom are Christians, and invites Muslim clerics to influence lawmaking.

But debate over the details has largely given way to street protests and megaphone politics, keeping Egypt off balance and ill equipped to deal with a looming economic crisis.

Mahmoud Ghozlan, the Muslim Brotherhood's spokesman, said the opposition could stage protests, but should keep the peace.

"They are free to boycott, participate or say no; they can do what they want. The important thing is that it remains in a peaceful context to preserve the country's safety and security."

The disruption is also casting doubts on the government's ability to push through economic reforms that form part of a proposed $4.8 billion IMF loan agreement.

Katt Williams arrested in California on an outstanding warrant

Comedian Katt Williams was arrested in Dunnigan, California, on Friday, December 7, Yolo County Sheriff's office confirmed to KABC-Television, OTRC.com's parent company.

The comedian had an outstanding felony arrest warrant in Sacramento that was issued on Thursday, December 6, related to a police chase with the comedian that took place on November 25. The comedian was bailed out of jail in the morning.

Authorities issued the warrant for the 41-year-old comedian for reckless driving, according ABC News. The California Highway Patrol said Williams fled officers on the three-wheeled motorcycle after he was spotted driving on a sidewalk near a hotel in downtown Sacramento.

Williams was reportedly asked to stop but refused and the incident led to a pursuit. Authorities claim that Williams hit nearly five people during the chase.

The Toyota Center in Houston, Texas, was forced to cancel Williams' event on Friday after he failed to show up to the venue. The Toyota Center officials issued a statement on Friday, according to ABC News, which said the event was canceled due to circumstances beyond their control.

The comedian made headlines earlier this week for failing to show up at his arraignment in Seattle on Thursday to face assault charges stemming from an earlier arrest.

Williams, whose real name is Micah Sierra Williams, faces charges of misdemeanor assault after his arrest in Seattle on Sunday, when he was also booked on suspicion of harassment and obstruction. He was released from custody around midnight after posting a $3,000 bond.

Williams is known for his role as Money Mike in the film "Friday After Next." He has appeared on TV shows, including "Nick Cannon Presents: Wild 'N Out," "The Tracy Morgan Show," "My Wife and Kids" and "NYPD Blue."

Canada opens a pipeline to China: The Cnooc-Nexen deal

SAN FRANCISCO (MarketWatch) ? Canada?s government has ruled: Selling two key energy companies to China is good for the nation.

Facing a Monday deadline, the government announced late Friday that the $15 billion bid the China National Offshore Oil Corp., or CNOOC Ltd. /quotes/zigman/274848/quotes/nls/ceo CEO +0.73% ,?made in July for Calgary-based Nexen Inc. /quotes/zigman/22967 CA:NXY -6.35% /quotes/zigman/22952/quotes/nls/nxy NXY -6.56% provides a ?net benefit? for Canada.

It also approved a $5.2 billion takeover of Progress Energy Resources Corp. /quotes/zigman/42776 CA:PRQ -4.35% by Petronas, Malaysia?s national oil company. See: Canada OK's CNOOC-Nexen, Petronas-Progress bids.

How the government reached its decision is a bit of a mystery. Just a month ago it looked like national security concerns would scuttle the Petronas-Progress deal, which in turn cast a very dark cloud over the CNOOC-Nexen takeover.

Now we know better.

Those betting correctly that the CNOOC-Nexen deal would go through ? and the 99% of Nexen shareholders who voted for it ? can now say with real conviction what they thought all along: Canada needs an new outlet for its surplus oil and gas.

Earlier this year the Obama administration rejected that part of the Keystone Pipeline project that would have carried oil from Canada to refineries along the Gulf of Mexico, essentially keeping output from Canada?s new oil shale fields bottled up north of the border.

The White House didn?t exactly kill the Keystone project, it just asked that it be revised to address environmental concerns.

There?s another way of looking at this cold shoulder from Uncle Sam. The U.S. has made huge production gains from its own oil shale boom, and that?s taken any urgency out of securing new imports from longtime supplier Canada.

Meanwhile, Canada has been looking for ways to beef up trade with Asia, especially China. With China?s biggest overseas oil company in hot pursuit of much-needed energy reserves anywhere they can get them, Ottawa clearly saw an opening. Bend the pipeline from the south to the west to meet growing demand in the biggest fuel market in the Far East.

This is about more than feeling rejected by the U.S., however, since much of Nexen?s reserves are in the North Sea, Africa and the Gulf of Mexico.

Because Nexen operates in the U.K., European Union regulators also needed to give their blessing to the deal, which they did earlier Friday. Once that key piece of the approval process was in place, Canada wasted no time pushing out what now can only be called a foregone conclusion: Nexen goes to Cnooc, Progress goes to Petronas, and Canada opens a gateway to Asia.

Friday?s decisions won?t end the raging debate in Canada over trade benefits versus national security. Prime Minister Stephen Harper, in making the announcement, even vowed to tighten the review process and, hopefully, make it more transparent.

But, as the old saying goes, the camel has got its nose in the tent now.

Crist's political hat trick: Former GOP governor, independent candidate announces switch to Dem

(CNN) ? Former Florida Gov. Charlie Crist, who served his state as a Republican, then sought office as an independent, indicated late Friday he had signed papers switching his party affiliation to Democrat.

Crist posted to Twitter a photo of himself holding voter regisration paperwork and the message, "Proud and honored to join the Democratic Party in the home of President @BarackObama!"

The news may come as little surprise to Sunshine State Republicans, who watched him campaign for Obama this cycle and speak at the Democratic National Convention.

Crist told The Tampa Bay Times newspaper, "I've had friends for years tell me, 'You know Charlie, you're a Democrat and you know it.' "

His move could be seen as an early step toward a run for governor. Gov. Rick Scott's first term ends in early 2015.

He won his 2006 bid for governor as a Republican. In 2010, he sought the GOP nomination for a U.S. Senate seat and was up against former state House Speaker Marco Rubio. With tea party support, Rubio took a lead on Crist, who left the party and continued his run as an independent.

His endorsement of Obama referenced the president's health reform law and handling of the economy. It drew criticism from Republicans who branded him "the silly putty of Florida politics."

He also backed Democratic Sen. Bill Nelson's reelection bid this year.

Republicans had noted his literal embrace of Obama at an event in 2009, when he was a Republican and serving as governor.
